    Got mine this morning.
    They have forcast the S word on high ground for us today and for the rest of the week.
    It has got a lot colder over the last couple of days, the flowers and plants had started to think it was spring and were showing their leaves and flowers a little early.

    Peggy, you are nosey but then its nice to know that you care about us.
    I am going into hospital on Thursday to have an operation on Friday to reverse my colostomy ( ie. join my colon up to my back passage again)
    If all goes well, as I am sure it will, I should be in for about 5 days.
    It may be a little longer before I can let you know how I am doing as the computer is up stairs in our office, and if last time is anything to go by it will be a couple of days before I will be strong enough to climb the stairs!!

    I will be here again before I go in
    Take care and keep away from the S. its no good for the warm blooded amongt us. It just makes you feel the need for blue skies and sunshine even more.

    Thoughts are with you. Never easy having tests just have to lie back and let it all go on around you. Just hope the nurses doing the tests are pleasant and as bonus pretty. Just to take your mind off all else.
    I do hope all goes well and you come out of this better than before.
    Take care of yourself and do what the Docs tell you. Go for a healthy diet. Low fat etc… Fish and chips only once a week and no Pizza unless you make it yourself and know what is in it!!!

    Also dont forget to allow all the alcohol to boil off before serving to get a better flavour. This applies to spirits as well!!

    Also use the best wine you can afford. It’s a true saying that the better the ingredients you us the better the finished result. My old tutor used to say use the wine in the cooking that you are serving with the meal… very sound advise 😀

    Hi Lucky
    The basic recipe for a cream soup is:
    1. Half the finished soup should be bechamel
    2. A quarter should be a puree appropriate to the characteristic of the desired soup
    3.The other quqrter should be made up of stock or milk to adjust the consistancy, taking into account any cream used.

    eg. For 2 ltrs cream of celery soup:
    1. 1 ltr thin bechamel
    2. 500 ml of celery puree (cooked celery passed through a fine sieve)
    3. 300 ml vegetable or chicken stock
    4. 200 ml cream to finish
    I use a liquidiser at the end of the whole process to make the puree and then pass the completed soup through a fine sieve.
    I would sweat the celery and some onions and leeks in the butter that I am using for the bechamel. Add the flour and cook to blonde roux. Then add my milk and stock. Let this cook out. Then liquidise and pass through a fine sieve to get rid of any stringy bits. Finish with the cream and adjust the seasoning. This mixture is better if not boiled from this point but can be kept warm in a bain marie or reheated gently up to simmer if required.

    I hope this is of some help to you.
    If you want to make cream of chicken soup then repalce the milk with chicken stock and the vegetables with minced chicken.
    The better the stock the better the finished soup.

    I’ll certainly give these a try.
    We can occasionally get fresh Snapper in our local supermarket, flown in from some where far away. (I would’nt mind collecting its air miles together with those of it’s collegues in the box!!)

    Thats what I thought, Some of the Cajun recipes I’ve found seem to be heavy on the salt. I can understand the pepper both red and black for heat but Salt!!!!!

    I was looking on the southern living web site and found this recipe for Gumbo that had been posted there in reply to a similar request.
    The replies seemed to rate this very highly.

    Log House Gumbo
    Source: Log House Restaurant, Biloxi, Mississippi

    1 1/2 cups chopped onions
    1 cup chopped celery
    1/2 cup chopped green bell pepper
    6 tablespoons vegetable oil
    1 1/2 tablespoons flour
    1 quart water
    2 bay leaves
    1 tablespoon ketchup
    1 tablespoon minced garlic
    Pinch of red pepper
    Pinch of black pepper
    1 tablespoon Worcestershire sauce
    1/4 teaspoon Tabasco sauce
    Salt to taste
    1 can okra
    2 cups canned tomatoes
    1 pound cleaned raw shrimp
    1/2 pound fresh crab meat
    1 1/2 teaspoons gumbo file

    Braise onions, celery and green pepper in 2 tablespoons of oil.

    In a separate pot mix 4 tablespoons of oil with flour. Brown well to make a French roux. Add water, bay leaves, ketchup, garlic, red and black pepper, Worcestershire sauce and Tabasco sauce to vegetable mixture. Salt to taste. Cook gently until vegetables are done and flavors well blended.

    Add okra, tomatoes, shrimp and crab. Thicken with roux and simmer briefly, adding water as needed, until the seafood is done. Add gumbo file and serve over rice.

    Makes 6 servings.

    Patty Melt Recipe

    1 slice American cheese
    1 slice Swiss cheese
    1/4 lb ground beef
    1/4 cup onions, sliced or diced
    3 tblsp butter, divided
    2 slices rye bread

    1. Saute onions until golden in 2 tablespoons butter until transluscent and lightly golden.
    2. Remove from the pan.
    3. Form the meat patty so it will fit the bread.
    4. Grill to desired doneness.
    5. Butter bread on one side; put buttered side down on hot griddle, put 1 slice cheese followed by onions then cooked patty, followed by cheese.
    6. Butter one side of the other slice of bread and place on top buttered side out.
    7. Fry until bread is crisp but not burned (be careful don’t have griddle too hot), turn over and do the same thing on the other side. Cheese should be well melted.
    8. Slice on the diagonal.

    It is a sad state of affairs when such drastic measures have to be taken.
    It seems the way that society is moving where normal decent people are hounded by these idiots that think they have a right to mess up anything at all decent.
    Sadly i think you have done the right thing to try and stop these people and I wish more people had the courage to follow your lead.

    What did you get up to over the holiday season?
    I just ate too much and put on about 7lb which I now have to get off– easier said than done. NO hangovers for me this year, I kept to good wine and some Champagne…
