I love eggplant parm and I love lasagna… So why not combine the two? I made this recipe using a special spicy vegetable-tomato sauce that I made earlier in the week. I must say, it came out incredible !!!

1 cup tomatoes — peeled, seeded and diced
1 small onion — oven roasted
1 cup mushrooms — minced
2 teaspoons garlic — minced
1/2 pound spinach leaves — blanched, chopped
1/4 cup nonfat cottage cheese
3/4 cup tofu — mashed

Italian Chicken BowTie Pasta

1.5 lb boneless chicken breast, chopped into bite size pieces
2 shallots, chopped
4 garlic cloves, chopped
1 small squash, chopped
8 oz fresh mushrooms, sliced
1 green pepper, chopped
1 tbs olive oil
Fresh basil, oregano, thyme, salt pepper - to taste
16oz can chopped tomatoes
1 lb bowtie pasta, cooked
