No Egg Tiramisu

One of my readers requested a version on Tiramisu without eggs. So here I am to the rescue!
Ingredients
* Mascarpone (or best-quality cream cheese), 18 ounces
* Heavy Cream, 3 cups

What do you do when you have over-ripened bananas? You make muffins !! I used to love my grandmothers banana nut bread, but muffins are great for on the go. I still use my grandmothers old muffin pans. Sometimes I like to make mini-muffins with this recipe, but I leave out the nuts.

Swedish Pancakes

I have such great memories of my grandmothers cooking. This was always one of my favorites. Makes a great breakfast, dinner, dessert…whatever!
3 eggs, beaten
1 1/4 c. milk
3/4 c. flour, sifted
1 tbsp. sugar
1/2 tsp. salt
1/2 tsp vanilla
Combine well-beaten eggs and milk.
Sift together dry ingredients.
Add to egg mixture, mixing until smooth.
