Copycat Taco Bell Cheesy Fiesta Potatoes

This is my favorite snack from Taco Bell. Very easy to reproduce at home.
1/2 tsp. of garlic powder
1/4 tsp. of ground cumin
2 lbs. of white potatoes, peeled and cubed to 1″ cubes
2 tbsp. of butter
2 tbsp. of olive oil
salt and pepper, to taste
1 1/4 c. of cubed Velveeta cheese
