Eggnog Pound Cake

“A sumptuous holiday pound cake with a Northwestern flavor. Excellent for Christmas buffets or open houses!”Original recipe yield: 1 – 10 inch tube or Bundt pan.
INGREDIENTS:
* 1/4 cup dried blueberries
* 1/4 cup chopped dried cherries
* 1/4 cup dried cranberries
* 2 tablespoons brandy
* 3 cups all-purpose flour
* 2 teaspoons baking powder
* 1/4 teaspoon salt
* 1/8 teaspoon freshly grated nutmeg
* 1 cup unsalted butter, softened
* 2 cups white sugar
* 3 eggs
* 1 teaspoon vanilla extract
* 1 cup eggnog
*
* 2 tablespoons brandy
* 2 tablespoons water
* 3/4 cup white sugarDIRECTIONS:
1. In a small bowl, combine dried blueberries, dried cherries, dried cranberries, and 2 tablespoons brandy. Soak for 15 minutes.
2. Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch tube pan or Bundt pan. Sift together the flour, baking powder, salt, and nutmeg; set aside.
3. In a large bowl, cream together the butter and 2 cups sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the eggnog, mixing just until incorporated. Fold in soaked fruit mixture. Spread batter into prepared pan.
4. Bake in the preheated oven for 55 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack.
5. In a small bowl, mix together brandy, water, and 3/4 cup sugar. With pastry brush, brush entire surface of cake with glaze. Cool completely before serving.DeniseParticipantFrom Allrecipes:

Original recipe yield: 1 – 8×4 inch loaf pan.INGREDIENTS:
* 2 cups all-purpose flour
* 1 tablespoon baking powder
* 1 teaspoon salt
* 1 teaspoon ground nutmeg
* 1/4 teaspoon ground ginger
* 1 cup white sugar
* 1/4 cup butter
* 1/4 cup shortening
* 2 eggs
* 1 teaspoon rum flavored extract
* 3/4 cup milkDIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8×4 inch loaf pan. Sift together the flour, baking powder, salt, nutmeg, and ginger; set aside.
2. In a large bowl, cream together sugar, butter, and shortening until light and fluffy. Blend in the eggs one at a time, then stir in the rum extract. Beat in the flour mixture alternately with the milk, mixing just until incorporated. Pour batter into prepared pan.

INGREDIENTS:
* 2 1/4 cups all-purpose flour
* 1 teaspoon baking powder
* 1/2 teaspoon ground cinnamon
* 1/2 teaspoon ground nutmeg
* 1 1/4 cups white sugar
* 3/4 cup butter, softened
* 1/2 cup eggnog
* 1 teaspoon vanilla extract
* 2 egg yolks
* 1 teaspoon ground nutmegDIRECTIONS:
1. Preheat oven to 325 degrees F (165 degrees C).
2. Combine flour, baking powder, cinnamon, and nutmeg. Mix well with a wire whisk and set aside.
3. Cream sugar and butter until it forms a grainy paste. Stir in eggnog, vanilla, and egg yolks. Beat at medium speed until smooth. Add flour mixture and beat at low speed just until combined.

“Thumbprint cookies with a delicious filling, these are perfect for Christmas. Does not use eggnog, but they have an eggnog taste. You can substitute 1/4 teaspoon rum extract and 1 tablespoon milk for the rum.”Original recipe yield: 4 dozen.
INGREDIENTS:
* 3/4 cup butter, softened
* 1/2 cup white sugar
* 1/4 cup packed brown sugar
* 1 egg
* 1/2 teaspoon vanilla extract
* 2 cups all-purpose flour
* 1/4 teaspoon salt
* 1/4 cup butter
* 1 cup confectioners’ sugar
* 1 tablespoon rum
* 1 pinch ground nutmegDIRECTIONS:
1. Preheat the oven to 350 degrees F (175 degrees C).
2. In a medium bowl, cream together 3/4 cup butter, white sugar, and brown sugar until smooth. Beat in egg and vanilla. Combine flour and salt; stir into the creamed mixture by hand to form a soft dough. Roll dough into 1 inch balls, and place balls 2 inches apart on ungreased cookie sheets. Make an indention in the center of each cookie using your finger or thumb.
3. Bake for 12 minutes in preheated oven. Cool completely.
4. In a small bowl, mix together 1/4 cup butter, confectioners’ sugar, and rum. Spoon rounded teaspoonfuls of filling onto cookies. Sprinkle with nutmeg. Let stand until set before storing in an airtight container.DeniseParticipantI forgot to mention, I am using Mozilla suite (NOT Firefox). As I said, no trouble. The only thing that happens is that it can take a very long time for the graphics to load up after I clear my cache, but it seems to be better now. I will let you know if it happens again.
DeniseParticipantYou should be able to substitute very well in any recipe with vanilla in it. The vanilla will help to disguise the fact that it isn’t chocolate. Some people actually prefer carob, though.

As far as chicken goes, the way to keep the white meat (especially breasts) moist is to be very careful to not overcook them. Even slight overcooking will dry out white meat. I can’t give you bbq tips, but I do know this much.
As far as skin and bones go, it’s a matter of preference. The skin and the bones will provide some protection for the meat, and the skin has a lot of fat in it that will melt down into the meat and keep it a little moister. They also add flavor. You can do just as well with boneless, skinless chicken, but the extra flavor will not be there and you will need to watch it a little closer.
In my experience, most men pick up the art of barbecuing very quickly. For some reason or other, they just seem to be better at it than most women. We tend to excel in the kitchen, but they tend to do better on the grill. Give your husband a little time, and I’ll bet he’ll learn it!
DeniseParticipantI think she is wanting it for an avatar. She loves purple. If Raylene had her way EVERYTHING would be purple! She prefers the purple that is more blue than red. She is wanting a granny with lavender hair and a purple dress. I found 2 that she loves, but the colors are wrong. If anyone is good at this stuff I can send you the one she has selected to change the colors for her. Just let me know where to send it.
