Not So Baked Potatoes

I was visiting my brother this weekend and we had a nice barbecue. He prepared this simple variation of baked potatoes, and it was really good!
4 potatoes
3 tablespoons butter, melted
3 tablespoons honey
1-2 tablespoons water
kosher salt, to taste

Spicy Breaded Potato Wedges

4 potatoes, quartered
1/4 cup mayonnaise
Salt, to taste
Pepper, to taste
Cayenne pepper, to taste
Bread crumbs
Quarter the potatoes.  Mix together the mayo, salt, pepper and cayenne.  Toss the potatoes in this mixture then roll them in the bread crumbs.  Place them on a non stick baking sheet and bake at 350 degrees F until brown and cooked through.

Summer Vegetable Medley

Here is an easy vegetable dish with lots of fresh flavor!

1/2 onion, chopped
1/2 large tomato, diced
2 cloves garlic, minced

Ingredients
-4 medium to large baking potatoes
-Butter
-1 cup Sour Cream
-Salt and Pepper (to taste)

-2 cups Shredded Cheddar Cheese (leave 3/4 cup in reserve)
