Ok, the body of the swan was a whole chicken breast, with a large shrimp attached for the head. I’m sure there was a sauce, but no recollection of ingredients – will quiz my daughters tomorrow to see if they remember more than I do. I’m guessing the chicken breasts were baked with a sauce and the shrimp cooked and attached at the last minute before serving. I’m sure we can fake it with a good baked chicken breast recipe and attach the shrimp, but I’d like to find the original recipe.

You asked about which magazine – and since it was ages ago I’m not positive, but I think it was a cover of either Family Circle or Women’s Day – and I’m not positive it was a cover – I do know it had a great picture with the recipe that showed exactly how to make them. I’m more concerned about the sauce/method. Both of my daughters seem to think they have the recipe ‘someplace’ but you know how that goes. I have done searches at those magazines web sites to no avail but I’m guessing it was probably even before then had a web site. I’m hoping someone has archived it someplace.
