Thanx for your response to my ? about roux. You’re right – I’ve been doing this for years, but never knew that this is what it was called 🙄 . And you’re right about the cold vs hot liquids – I was always told that using very cold liquids helped prevent lumping!! But, I guess that could be a “to each his own” preference.
