    Peggy,

    Glad you enjoyed the joke. Seems as lot of people are dieting this time of the year so to help it along I though a little humor might not hurt.

    I don’t know what happen that the system would not let me in. I even changed my password. Just left it for a while, and now it works.

    Over the Holidays I sent some of the e-cards, so glad we have them now. You have some of the better one that I have seen. I enjoyed them, and Thank you. It is a nice addition to the site. Cindy

    Hey, Bon, A Cajun Lady. Sure glad you like the Boudreaux and Rodrique joke. I think Boudreaux jokes are the best, and so is the cajun food. My surprise when I saw my joke in the newsletter. Didn’t know they were going to use it. Really made me feel good. I live just a little south of Ft. Worth. Our weather is off and on here too. Some mornings its sweat pants and in the afternoon its shorts. Have a good day.

    DELUXE DARK CHOCOLATE CAKE MIX
    (COPYCAT–DUCKAN HINES)

    To make mix:

    2 cups all-purpose flour
    1 3/4 cups superfine sugar
    3/4 cup cocoa
    1 teaspoon baking soda
    2 teaspoons baking powder
    1 teaspoon salt
    4 tablespoons vegetable shortening

    Combine flour, sugar, cocoa, baking powder, baking soda, and salt. Stir to combine. Add shortening, using electric mixer on medium speed to blend the shortening into the dry ingredients. Completely mix shortening until no chunks are visible. This is the mix which may be kept in a sealed container for several months.

    To make the cake:

    1 1/3 cups water
    1/2 cup vegetable oil
    3 large eggs

    Preheat the oven to 350*F. Grease sides and bottom of two 9″ baking pans, or one 9×13″ pan. Lightly flour the greased pans. Blend the dry cake mix (above) with water, oil, and eggs in a large bowl with the mixer at low speed until just moistened. Kick up the speed to medium and mix 2 more minutes.

    Pour batter into pans and bake 30-33 minutes for the 9″ pans and 35-38 minutes for the 9×13″ pan. If you wish to make cupcakes, bake for 19-22 minutes.
