Green Tomato Pie
6 large green tomatoes
1 tablespoon salt
1 large lemon, peeled
1 1/2 cups granulated sugar
2 tablespoons flour
1 teaspoon nutmeg
2 tablespoons butter
Pastry for double-crust pie
Slice tomatoes and stir in salt. Let stand at least 1 hour. Drain off all juice. Make enough pie crust for a double crust pie. Sprinkle a little of the flour, sugar and nutmeg mixture in the bottom crust. Arrange slices of tomato in pan to heaping full.
Slice the peeled lemon on top of the tomatoes. Sprinkle the remainder of the sugar and flour with nutmeg on top. Dot with butter. Cover with top crust. Bake at 425 degrees F for 15 minutes. Reduce the temperature to 325 degrees F and bake for 45 to 55 minutes longer. May be served hot or cold.

This pie is very much like apple, but better and really different.
425 degrees F for 15 minutes, then at 325 degrees F for 50 minutes more.
About 1 1/4 pound very green tomatoes-not pink
Slice tomatoes in half and then with cut sides down, slice the halves very thinly (about 4 cups very thinly sliced).
3/4 cup seedless raisins, plumped
1 1/2 teaspoons grated lemon rind
2 tablespoons lemon juice
1 tablespoon cider vinegar
1 1/2 cups granulated sugar
1/8 teaspoon ginger
1 teaspoon cinnamon
1/2 teaspoon salt
3 tablespoons flour
1 or 2 tablespoons fine dry bread or cracker crumbs.
2 tablespoons margarine or butter
Cut tomatoes in half and slice them almost paper thin. I keep raisins soaking in a little rum in a jar, so they are always plump. You could pour boiling water over them in a sieve to plump up if you don’t want to use rum.
Drain well.
Put tomatoes, raisins and rind in a large bowl. Sprinkle with lemon juice and vinegar.
Mix sugar, ginger, cinnamon, salt and flour in a small bowl.
Line a large pie pan with dough. Sprinkle crumbs over bottom. Sprinkle about 1/3 cup of the sugar mixture over the crumbs.
Stir the rest of the sugar mixture into the tomatoes and heap into pan.
Dot with small pieces of the butter and top with crust.
Sprinkle the top with a little sugar and nutmeg if desired, looks nice. I often put 1/2 teaspoon or so of nutmeg into the flour when I’m making the crust also.

6 or 7 peeled and cored green tomatoes
4 tablespoons cider vinegar
1 cup granulated sugar
2 tablespoons tapioca
1/4 teaspoon salt
Pastry for a 9 inch two-crust pie
2 tablespoons butter
Slice tomatoes very thin into mixing bowl. Sprinkle with vinegar, combine sugar, tapioca, and salt. Fold into tomato slices. Pour into pie crust and dot with butter, cover with top crust and seal edges. Bake at 450 degrees F for 15 minutes, then at 350 degrees F for 30 to 45 minutes depending on your oven.

1/2 cup pineapple juice
3 tablespoons soy sauce
1 1/2 teaspoons ginger
1/2 teaspoon garlic powder
1/4 cup Jack Daniel’s Whiskey
Combine all ingredients and mix well. Dip meat in sauce and place on grill over hot coals. When meat is turned, brush with sauce. Grill to desired degree of doneness. Just before meat is removed from grill, brush again with sauce.
Servings: 8

1/4 cup Jack Daniel’s Whiskey
1/4 cup soy sauce
1/4 cup Dijon-style mustard
1/4 cup minced green onions and tops
1/4 cup firmly packed light brown sugar
1 teaspoon salt
Dash of Worcestershire sauce
Pepper to taste
Combine all ingredients. Mix well. Use to marinate shrimp or scallops for 1 hour or beef, chicken or pork in the refrigerator overnight. Use to baste the shellfish or meat as it is grilled.
Makes about 1 1/4 cups.
Servings: 4
Jack Daniel’s Rib Glaze

1/2 cup dark brown sugar
1 cup catsup
2 teaspoons Worcestershire sauce
1/4 cup vinegar
1 tablespoon fresh lemon juice
3 cloves garlic
1/2 teaspoon dry mustard
Salt and pepper to taste
Combine all ingredients, mix well. Brush ribs with a thin coating of glaze and place on grill. Continue to baste when turning ribs. Makes enough for 2 racks of 7 to 10 ribs each.
Servings: 4
Jack Daniel’s Rib Sauce
1 cup Jack Daniel’s whiskey
1/2 cup dark brown sugar
1 cup catsup
2 teaspoons Worcestershire sauce
1/4 cup vinegar
1 tablespoon fresh lemon juice
3 cloves garlic, minced
1/2 teaspoon dry mustard
Salt and freshly ground black pepper to taste
Combine all ingredients and mix well. Brush ribs with thin coating of glaze and place on grill. Cook according to your favorite grill method. Continue to baste when turning ribs.
Makes enough for 2 racks of ribs, 7 to 10 ribs each, or 4 servings.
Jack Daniel’s Spiced Whiskey Sauce for Pork

1/4 cup Jack Daniel’s Whiskey
1/4 cup Dijon-style mustard
1/2 cup honey
1/4 cup soy sauce
2 cloves garlic, minced
1 teaspoon Worcestershire sauce
1/4 teaspoon powdered ginger
1/4 cup corn oil
Combine all ingredients. Marinate pork in refrigerator overnight.
Grill, basting often with marinade.
Makes 1 1/2 cups.
