    I have always known salsa to be the spicy tomato condiment that you use for dipping etc. whereas Picante Sauce is sort of a sweet and spicy sauce that I often put on Meatloaf, it consists of ketchup, brown sugar, nutmeg and dry mustard.

    For David C., I am just making a guess here, but I am thinking that the salt and pepper and other seasonings go into the flour to create a seasoned flour in which you dredge the fish. Is this what you are questioning?
