    Copeland’s of New Orleans Creole Eggplant Pirogue

    1 eggplant, sliced 1/2″ thick
    white flour
    salt and pepper, to taste

    2 cups milk
    seasoned breadcrumbs

    For shrimp stock :
    2 tablespoons butter
    1 tablespoon fresh garlic, minced
    2 tablespoons green onions, sliced
    1 teaspoon fresh parsley, minced
    50-60 shrimp, peeled
    salt and pepper, to taste

    For Creole sauce :
    1/4 lb salted butter
    1/4 lb yellow onions, diced
    2 tablespoons minced garlic
    1 tablespoon fresh basil, chopped
    1/2 lb green bell peppers, diced
    1/4 lb celery, diced
    2 tablespoons sugar
    1/4 lb roma tomatoes, diced
    1 cup chicken stock
    1/4 gallon tomato sauce
    salt and pepper, to taste

    For shrimp stock :

    For Creole sauce :

    Serve with yellow rice. Cover with Creole sauce. Place fried eggplant on the side and enjoy.

    There menu says: Half Shell’s signature starter. Plump Maine lobster and gulf shrimp tossed in a creamy Acadia dressing. Served with toasted French bread slices.

    Chrisi, I would really check it out more…it said not along with any other d…, not for people with health issues…sounds like you have to be in certain areas with a certain business in that area.

    If you want… look in to a “heart healthy d…”. …but basically smaller portions, 5 small a day…breakfast always, no white at night…rice, potato, bread, sauce, puddings, ice cream…that kind of things. Limit your red meat intake to maybe 4 oz– 2 – 3 times a week. White meat & fish about the same…4 oz. 2 – 3 times a week. Eat lots of fresh fruit & vegs. Go light on dips if you have to have them. You can “treat” yourself to dessert (a reasonable portion) a couple times a week. Drink plenty of water…(not just in tea & coffee!) Exercise is nice, but walking at a steady pace (start with about a mile…1/2 mile there & back) is good too…make sure you stretch out good before & after your walk.

    By “starting a new way of eating” you are more likely to stay with it and succeed. It is not a “d”!!! It is a “new way of life that you can stick with & see results that will last!!!”.

    If someone is having trouble in other areas of their life they do not want to start a “D” and then find they can’t stick with it…they will feel like they have failed…and in that they will most likely go back to finding comfort in over eating.

    And remember: a “quick fix” hardly ever lasts.

    Sorry for the lecture; it wasn’t supposed to be…just a suggestion. 😳 🙄

    This recipe sounds real good. I’ll have to try it sometime. My father used to make hushpuppies with canned tomatoes instead of corn and that was real good too.
