    Owing to their small size, smelts only lend themselves to a very limited number of preparations…………………….
    it lists a few ways…………………..

    Smelts English Style
    Open the smelts down the back and carefully bone, without marring them.
    Treat them with fine bread crumbs, and pat them with lightly with the flat of a knife, that the bread crumbs may hold well.
    Cook them in clarified butter (recipe on page 175), set them on a long hot dish, and sprinkle them with half-melted butter a ‘la Maitre-d’hotel (recipe on page 150).
