    Dipping Sauce for Coconut Shrimp

    1 cup orange marmalade, mango or pineapple preserves

    For spicier sauce, do not remove seeds.
    Mix with marmalade and leave in refrigerator for an hour to give flavors a chance to blend. Arrange shrimp on a platter with dipping sauce in a bowl in the middle and serve.

    Creamy chili sauce for Blooming Onions
    combine
    1 pint each mayonnaise and sour cream
    1/2 cup chili sauce
    1/2 tsp cayenne pepper

    Optionally add 1/4 C horseradish.

    Spicy Soy Dipping Sauce

    1/4 cup vegetable stock
    1/2 cup light soy sauce
    1 tablespoon rice wine or dry sherry
    2 tablespoons sesame oil
    2 tablespoons rice vinegar
    1 tablespoon sugar or honey
    1 teaspoon hot oil
    Combine the ingredients in a small boil. Stir to dissolve the sugar,
    then cover and refrigerate until serving.

    PEANUT MARINADE DIPPING SAUCE

    The traditional thick dipping sauce for satay, the Indonesian skewered beef dish, is the inspiration for this marinade.
    1/2 c. peanut oil
    1/4 c. white wine vinegar
    1/4 c. tamari (see note)
    1/4 c. fresh lemon juice
    4 garlic cloves, minced
    8 cilantro sprigs, minced
    1 whole dried red chili pepper, minced, or 2 tsp. dried red pepper flakes 2 tsp. chopped fresh ginger

    Combine all the ingredients in a blender or food processor. Blend well to emulsify, adding a few drops of water if the mixture is too thick. iF USED AS A MARINADE, Marinate beef or chicken overnight.
    2 cups.

    Note: Tamari is a strong soy sauce found in Asian and specialty markets. Use soy sauce if tamari is unavailable.

    Spicy Sesame Dipping Sauce

    Ingredients
    1/4 cup soy sauce
    1/4 cup lime juice
    2 tablespoons sambal (available in Indonesian and some Chinese markets)
    2 shallots, diced
    2 tablespoons bias-cut scallions, green part only
    2 tablespoons sesame oil
    1 teaspoon sugar

    Mix all the ingredients for the dipping sauce together in a bowl until the sugar dissolves.

    1 cup mayonnaise
    3 tablespoons prepared horseradish
    1/2 cup sour cream
    1 dash Worcestershire sauce
    3 tablespoons prepared mustard

    Directions
    In a separate small bowl, combine the mayonnaise, horseradish, sour cream, Worcestershire sauce and mustard. Mix well, and serve with chicken tenders / fingers / nuggets for dipping.
