PEANUT MARINADE DIPPING SAUCE
The traditional thick dipping sauce for satay, the Indonesian skewered beef dish, is the inspiration for this marinade.
1/2 c. peanut oil
1/4 c. white wine vinegar
1/4 c. tamari (see note)
1/4 c. fresh lemon juice
4 garlic cloves, minced
8 cilantro sprigs, minced
1 whole dried red chili pepper, minced, or 2 tsp. dried red pepper flakes 2 tsp. chopped fresh ginger
Combine all the ingredients in a blender or food processor. Blend well to emulsify, adding a few drops of water if the mixture is too thick. iF USED AS A MARINADE, Marinate beef or chicken overnight.
2 cups.
Note: Tamari is a strong soy sauce found in Asian and specialty markets. Use soy sauce if tamari is unavailable.
