    Yankee Pie (or Quiche)

    Ingredients :

    4 x Eggs
    1 cup Milk
    1 cup Fiddleheads, cooked —
    Chopped
    2 tbl Leeks — chopped,cooked
    1 tbl Parsley, chopped — or 2
    1 cup Cheddar cheese, mild —
    Shredded
    Salt
    1 x Pie crust , partially baked
    9 x Or 10″
    8 whl cooked fiddleheads

    Method :

    * Beat the eggs with lthe milk until blended. Fold in the chopped fiddleheads, leeks, and parsley, and half of the grated cheese. Season with salt to taste. Turn into the partially baked shell and sprinkle on the remaining cheese. Decorate the edge with whole fiddleheads. Bake in a preheated 350^ oven for 40 minutes, or until set. Let rest 10 minutes before serving.

    When I lived in Vermont (boo hiss 😡 ) fiddleheads grew everywhere! I’m not sure if I ever had any though.

    I think maybe you messed up on your recipe though….I didn’t see ANY Yankees in it at all!!! I have one hanging around the house I could use!! Nope–he just went back out in the woods after the ellusive deer again!
