Chicken Portobello<\/a> which called for some pesto. A few of my readers have asked for a healthy pesto recipe, so here it is!<\/p>\n1 cup fresh basil, firmly packed
\n1\/2 cup parsley
\n1\/4 cup freshly grated Parmesan or Romano cheese
\n2 Tbs pinenuts
\n2 garlic cloves
\n1\/4 cup olive oil
\n1 tomato, seeded
\n2 Tbs chicken broth<\/p>\n
1 Place all ingredients into a food processor and blend to desired consistency (either chopped or smooth). Refrigerate or freeze until ready to use.<\/p>\n
2 One generous serving is 1\/4 cup. Mix into hot pasta or spoon onto grilled fish or chicken. (Lemon juice may be added to taste).<\/p>\n
