1 3\/4 oz Chinese vermicelli
\n1\/2 tsp Oil
\n1 tsp Grated fresh ginger
\n1\/2 Tbs Chopped coriander
\n1\/2 Garlic clove
\n1\/2 Onion
\n1\/2 Red pepper
\n1\/2 Green pepper
\n1\/2 large Carrot
\n7 oz Baby corn
\n7 oz Straw mushrooms
\n1\/4 cup Soy sauce
\n1\/8 cup Malt vinegar
\n1 tsp Brown sugar
\n1\/4 cup\u00a0 Coriander leaves
\n1\/2 tsp\u00a0 Preserved chopped chili<\/p>\n
Finely chop the coriander and chili. Dice the garlic clove. Cut the peppers and carrot into fine strips. Drain the mushrooms and corn. Cut the onion into thin wedges.
\nDeep fry the chinese vermicelli in hot oil. Drain on absorbent paper. Place on a large serving plate and keep warm.
\nHeat the teaspoon of oil in a large pan. Add the ginger, coriander and garlic and cook for 2 minutes. Add onion, red and green peppers and carrot. Stir fry for 3 minutes.
\nAdd the corn, mushrooms soy sauce, vinegar, brown sugar and chilli. Stir to combine and cook over a high heat for 3 minutes. Spoon the vegetables over the noodles, pour over any remaining sauce. Garnish with the coriander leaves and serve.<\/p>\n","protected":false},"excerpt":{"rendered":"
