I prepared this for my lovely Katie today and she couldn’t stop raving about how great it tasted.\u00a0 It’s healthy and couldn’t be easier to make it.\u00a0 I served it with some simple roasted Brussels sprouts.\u00a0 I’ve included the recipes for both below.\u00a0 \ud83d\ude42<\/p>\n

\"tilapia\"<\/p>\n

Lemon Garlic Tilapia<\/strong><\/p>\n

1 (8oz) tilapia filet
\n2 tablespoons lemon juice
\n1 tablespoon olive oil
\n2 cloves garlic, chopped
\nsalt, to taste
\nblack pepper, to taste
\nlemon wedge, for serving<\/p>\n

Preheat the oven to 400 degrees F.<\/p>\n

In a bowl, combine the lemon juice, olive oil, garlic, salt and pepper.<\/p>\n

Place the tilapia filet in the bowl and coat with the mixture.\u00a0 Let marinate for about 10 minutes.<\/p>\n

Spray olive oil on a baking pan, then place the tilapia filet on top.<\/p>\n

Bake in the oven for 15-20 minutes or until cooked through.<\/p>\n

Serves 1<\/p>\n

Roasted Brussels Sprouts<\/strong><\/p>\n

1 lb. Brussels sprouts, trimmed
\nolive oil
\nsalt
\nblack pepper<\/p>\n

Preheat the oven to 400 degrees F.<\/p>\n

Place the Brussels sprouts in a baking dish and drizzle with olive oil.\u00a0 Season with salt and pepper.\u00a0 Toss to coat.<\/p>\n

Bake in the oven for 30 minutes.<\/p>\n
