2 ripe avocados
\n1 small onion, chopped
\n1 garlic clove, chopped
\n2 tablespoons fresh chopped cilantro
\n1 tablespoon chopped fresh mint
\n2 tablespoons fresh lime juice
\n3 cups vegetable stock
\n1 tablespoon rice vinegar
\n1 tablespoon low sodium soy sauce
\nsalt & black pepper, to taste<\/p>\n

Cut the avocados in half and remove the pit.\u00a0 Scoop out the flesh and place into a blender.\u00a0 Add in the onion, garlic, cilantro, mint, lime juice and 1 1\/2 cups of the stock.\u00a0 Process until smooth.<\/p>\n

Add the rice vinegar, soy sauce and the remaining stock. Season with salt and pepper, to taste.\u00a0 Process again to mix.<\/p>\n

Serve immediately or cover and refrigerate until ready to serve.<\/p>\n","protected":false},"excerpt":{"rendered":"
