I went grocery shopping yesterday and bought tons of fresh vegetables, but I still had some random veggies left over from the week before, so I made a vegetable stock with them before they went bad.<\/p>\n
1 tablespoon olive oil
\n1 large onion
\n2 stalks celery, including some leaves
\n2 large carrots
\n1 bell pepper, chopped
\n1 bunch of asparagus stems
\n8 cloves garlic, chopped
\n8 sprigs fresh parsley
\n6 sprigs fresh thyme
\n2 bay leaves
\n1 teaspoon kosher salt
\n1\/2 teaspoon black pepper
\n2 quarts water
\nDirections:<\/p>\n
Chop washed vegetables into 1-inch chunks.
\nHeat olive oil in a large pot. Add all the vegetables and spices. Cook over high heat for 5 to 10 minutes, stirring frequently.
\nAdd water and bring to a boil. Lower heat and simmer, uncovered, for 30 minutes. Strain. Discard vegetables.
