Shrimp in Garlic Butter Pomodoro Sauce
I made this tasty dish tonight for my girlfriend’s birthday. This dish is so simple yet packed with so many wonderful flavors. Serve over pasta with a piece of garlic bread on the side.
Ingredients
- 1 lb. large shrimp peeled & deveined
- salt
- black pepper
- olive oil
- 8 oz. angel hair pasta
- Parmesan cheese for topping
Sauce:
- 4 cloves garlic minced
- 4 cups fresh tomatoes diced
- 2 cups chicken broth
- 4 tbs butter
- 1/2 cup fresh basil cut or torn into small pieces
- salt
- black pepper
- crushed red pepper flakes

Instructions
- Heat a little of oil in a large skillet over medium heat. Add the shrimp and season with salt and pepper. Cook until pink, about 2 minutes on each side. Remove shrimp from the pan and set aside.
- In the same pan, add a little oil over medium low heat and add the garlic in. Saute for a minute or two until it becomes fragrant but not burnt.
- Add the tomatoes and broth and simmer for 10-12 minutes. The sauce will start to become thick.
- Meanwhile cook according to package directions. Drain and set aside.
- Once the sauce has thickened, add the butter and basil and stir to combine. Season to taste with salt, black pepper and red pepper flakes.
- Once the sauce is ready, add the shrimp back in to warm. Serve the shrimp and sauce over the pasta.
