Copycat Taco Bell Meximelt
Were you as upset as I was when Taco Bell discontinued the Meximelt from its menu? It was one of my favorite menu items. I don’t understand why you can’t still order it since they definitely have all the components of this taco readily available. Lucky for you, I’m going to share with you the secret to recreating this dish at home.

Ingredients
- 1 lb. ground beef
- 1 packet taco seasoning (or 2 Tbs taco seasoning)
- 8 oz pepper jack cheese, shredded
- 8 oz colby-jack cheese, shredded
- 8 flour tortillas

- 2 Tbs water
Servings: tacos
Instructions
- In a skillet over medium heat, brown the ground beef then drain it.
- Return the beef to the skillet and add the taco seasoning and 2 tablespoons of water.
- Place some of the cheeses on each tortilla. Top with the seasoned ground beef. Top with more cheese. Spoon some of the pico de gallo on top.
- Roll each tortilla up and wrap with a damp paper towel. Microwave for 60 seconds. Serve immediately.

That’s WAY more work than I want to do, so, like just tonight, I order soft tacos without the lettuce and side orders of pico. I shred my own cheese, but if you don’t, just order a couple sides of cheese.
At home, I just heat them up and add the cheese and pico (I use about one and a half cups of pico per item. Taco Bell always steamed the meximelts, so for the final heating, I stick it in a ziploc bag, which generates steam. I’ll have to try your pico recipe because I got some from Wal Mart and I didn’t like it.
Rotisserie chicken, shredded. Corn taco tortilla heated in medium hot skillet one side, 10-15 seconds. Bring it off, hot side up, 3 shreds each of pepperjack and Colby jack, chicken, 3 shreds of each cheese again, pico. Fold up. Place in same tortilla medium hot pan for 5-7 seconds, flip melt to other side, slight press to flatten and let grill for 5-7 seconds. Plate up, eat up!
