Filet Mignon with Chive Butter
Chive Butter:
1 stick butter, softened
2 tablespoons fresh chives, chopped
salt, to taste
2 6-oz. filet mignon
2 tablespoons butter
salt, to taste
black pepper, to taste
In a bowl, use a spoon to combine the butter, chives and salt. Refrigerate until ready to use.
Preheat the oven to 400 degrees F.
In an oven proof sauté pan melt 2 tablespoons of butter over medium heat.
Season the filets on both sides with salt and pepper.
Sauté the filets for 2 to 3 minutes on each side.
Place in oven for 4 to 5 minutes.
Remove from the oven and switch the oven to broil.
Spread some herb butter on top of the filets and broil for 1 to 2 minutes. Serve immediately.
Serves 2
The steaks sound fantastic with the addition of the chive butter YUM!
