2 lbs. beef shank
\n2 cups water
\n1 teaspoon salt
\n1\/8 teaspoon black pepper
\n1\/8 teaspoon cayenne pepper
\n1\/3 cup celery, diced
\n1\/3 cup carrots, julienne
\n1\/3 cup onions, chopped
\n1 quart beef stock
\n3 tablespoons barley
\n1\/2 teaspoon Worcestershire sauce<\/p>\n
Add beef shank, water and seasonings to a large pot and simmer for about 2 hours or until tender.
\nPick the meat from the bones and return the meat to the stock. Add the remaining ingredients to the pot and simmer for about 30 minutes.<\/p>\n
