1-2 large yellow fin tuna steaks (cut into 3\/4″ cubes)
\n10 black olives, pitted
\n1 hard boiled egg, sliced
\n2 small red potatoes, sliced
\n2 tablespoons extra virgin olive oil
\n1 small sliced onion
\n1 vine ripe tomato, diced
\npinch of fresh chopped parsley
\njuice from 1 lemon<\/p>\n

Cook the eggs and potatoes in advance and allow them to cool.\u00a0 In a hot pan, sear the seasoned tuna lightly.\u00a0 Do not over cook the fish.\u00a0 Put the seared tuna in a large bowl and add onions, tomatoes, sliced potatoes, eggs, olives and parsley.\u00a0 Toss the salad lightly with a spatula as you add olive oil and lemon juice.\u00a0 Season to taste with salt and pepper.<\/p>\n

To serve, arrange salad leaves on a plate and place the tuna mixture on top.\u00a0 Garnish with a lemon wedge, Bermuda onion and cherry tomatoes.<\/p>\n","protected":false},"excerpt":{"rendered":"
