Easy Cucumber Salad
This easy cucumber salad is great as a side dish or just a healthy snack. Odds are you already have most of the ingredients on hand in your kitchen.
Ingredients
- 2 tablespoons white vinegar
- 1/2 tablespoon olive oil
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh dill
- 1 teaspoon minced garlic
- 1 tablespoon white sugar
- 1 teaspoon salt
- black pepper to taste
- 1 cucumber sliced or chopped
Servings: servings
Instructions
- Whisk together the vinegar, olive oil, parsley, dill, garlic, sugar, pepper and salt in a bowl; add the cucumber and toss to coat.
- Cover and chill in refrigerator 2 to 4 hours. Stir well before serving.
