Spicy Breaded Potato Wedges

4 potatoes, quartered
1/4 cup mayonnaise
Salt, to taste
Pepper, to taste
Cayenne pepper, to taste
Bread crumbs

Quarter the potatoes.  Mix together the mayo, salt, pepper and cayenne.  Toss the potatoes in this mixture then roll them in the bread crumbs.  Place them on a non stick baking sheet and bake at 350 degrees F until brown and cooked through.

What is a .torrent/BitTorrent file?

Low Fat Garden Vegetable Wraps

Summer is almost over, but there is plenty of time to enjoy the fresh flavors from the earths harvests ! The title says low fat, but that does not mean low flavor. This is a simple recipe that goes great for lunch or dinner. Feel free to experiment by adding some fresh vegetables from your home garden.

1 small zucchini, sliced
1 small sweet red pepper, chopped
1/4 cup canned black beans (rinsed & drained)
1/4 cup salsa
1/4 cup low-fat shredded cheddar cheese
4 burrito size whole-wheat flour tortillas

Place zucchini, pepper and 2 tablespoons of water in a large non-stick skillet. Cook over medium-high heat until slightly tender, about 4 minutes.
Stir in beans and salsa; heat through, about 2 minutes.
Spoon 1/2 cup of the mixture onto each tortilla and serve each with 1 tablespoon of cheese. Fold the ends of the tortilla over, roll and serve.

Serves 4

Nutrition Facts:  153 calories, 3.4 g fat, 1.7 g cholesterol, 385 mg sodium, 24 g carbohydrates, 3.7 g fiber, 7 g protein

I know I have some bad habits, but what is wrong with a little blog addiction ? Blogging is todays biggest crazy. People love to read, comment and even author their own blogs. We even have blogs about blogs! How can one resist this trend? Blogs are great sources of information and opinion; a great way to communicate on various topics.

I’ve only been blogging for a little over a year now. At first the concept seemed foreign, but now I love using my blog to share recipes and cooking information. My blog might be about food, but I explore blogs on so many different topics. I’m not sure if I’d really call it an addiction, its just a good idea! I found this little quiz to find out how addicted I was to blogging, so I took it. I can’t say I’m surprised at the results…

The Very Best Brownie Recipe Ever !

Brownie recipes are a dime a dozen these days. Everyone makes their claims, but I’m telling you now, once you try this recipe, you will agree… This is the very best brownie recipe ever ! I like to serve mine with a scoop of vanilla ice cream. Care to share your favorite brownie recipe ?

Brownie
1 cup butter, softened
2 cups sugar
1/3 cup cocoa
4 eggs
1 1/2 cups all purpose flour
2 teaspoon vanilla
1/4 teaspoon salt
1/2 cup chocolate chips

Frosting
1 2/3 cups powdered sugar
1/2 cup butter
1/3 cup cocoa
1/3 cup canned evaporated milk

To prepare the brownie, mix together the butter, sugar and cocoa.
Stir in the eggs, flour, vanilla and salt; stir until combined.
Pour into a 1 inch deep baking sheet. Bake in a 350 degrees F oven for 20 minutes. Sprinkle the chocolate chips over the brownie about 10 minutes into the baking process.
To make the frosting, combine all the ingredients and mix well. Once the brownie has cooled, spread the frosting on top.

This is what you call chocolate heaven !

Summer Vegetable Medley

Here is an easy vegetable dish with lots of fresh flavor!

1 large summer squash, diced
1/2 onion, chopped
1/2 large tomato, diced
2 cloves garlic, minced
1 small can of corn
1 tablespoon olive oil
1 tablespoon butter
fresh chopped parsley
salt & pepper, to taste

Heat the oil in the skillet, add the onions and saute for about 2 minutes.
Add the garlic and saute for another 10 seconds.
Add the butter and squash and saute for another 1 -2 minutes.
Add the tomatoes and corn. Season with salt and pepper.
Saute until vegetable are slightly tender.
Mix in a large pinch of chopped parsley and serve.
