7 Day Sweet Pickles, they are very crisp and so easy to make. It’s the only kind of pickles my hubby will make.
Here’s the recipe if anyone wants to try them.7 Day Sweet Pickles
7 lbs. med. size cucumbers
water to cover
1 qt. vinegar
2 T. salt
8 c. sugar
2 T. mixed pickle spicesWash cukes real good & cover with boiling water. Let stand 24 hrs. then drain.
Repeat each day for 4 days using fresh water each time.
On teh 5th day cut cukes in 1/4″ rings. Combine vinegar, sugar, salt & spices (put in bag in you want) (also add 1/2 to 1 c. water if you like)
Bring liquid to a boil & pour over sliced cukes.
Let stand 24 hours.
Drain syrup in to a pan and bring to a boil.
Pour over cukes.
Repeat on the 6th day.
On the last day, drain off syrup again & bring to a boil.
Add cukes & bring back to the boiling point.
Pack into hot jars & seal.
Put jars into a canner & cover with water, bring to a boil & boil for about 5 minutes. remove jars and let cool. Listen for the lids to pop then you’ll know they are sealed.
These are very crisp & delicious pickles.
