We have Giant ZUCCHINIIN’s here in Calif. A friend gave me this one yesterday. 18″ Long 12″ in diameter at the thickest part. 😯

1 giant or 2 moderately large zucchini, steamed until tender but not limp
1 lb. ground turkey or beef
1 small chopped onion
2 cloves garlic, minced or pressed
1 large tomato, diced (you want at least a cup)1 cup chopped mushrooms
1/2 cup raisins
insides of steamed zucchini, chopped
1 cup of cooked rice or quinoa or couscous
salt, pepper, cumin and fresh cilantro or parsley1 cup grated cheese (whatever you’ve got)
Cut the zucchini in half and steam. You can do it on a pot of water on the stove or in a baking pan in the oven. If you go the oven method, line the zucchini cut side down in about an inch of water and cover with foil. Bake at 350 degrees until it is tender. When they are cool enough to handle, scoop out the insides of the zucchini, leaving a sturdy inner wall and saving the scooped out insides.
In a large pan, saute the meat, onions and garlic together. If you are using a fatty grind of beef, you might want to cook it separately so that you can pour off some of the fat. Reversely, if you are using ground turkey breast, you may need to add a little stock or other liquid, because it can get pretty dry. If you want to skip the meat altogether, feel free to substitute crumbled tofu, TVP or Quorn grounds.
When the meat is cooked, add in the mushrooms and tomatoes. Give them a minute to cook and then add in the raisins, grain and scooped out zucchini insides. Season to taste and make any adjustments that suite you. If you don’t like cumin, feel free to replace it with oregano, rosemary or some other spice that is more to your liking.
Fill the hollowed out zucchini with the mixture and bake at 350 degrees for 10 to 15 minutes. In the last few minutes of baking time, pull out pan out and top the stuffed zucchini with the grated cheese. Return to oven long enough for cheese to melt.

The main item in BBQ sauce that causes the high carb levels is of course sugar, so you should look for recipes that do not have any sugar or substitute the sugar with a substitute like Splenda. You can make your sauces sweet if you like, but not all barbeque sauces have to sweet to be delectable.
Try this one on. You will need:
Place all of the ingredients in a medium saucepan and bring to a boil. Then lower the heat and simmer for around 15 minutes. All done and you have a low carb barbeque sauce that everyone at your dinner party is sure to love.Of course you can adjust if you are serving seafood, beef, pork, chicken or plain hamburgers.
For any barbecue sauce you will need some type of tomato product such as tomato sauce, ketchup, or a combination of tomato puree and tomatoes. Then all the other ingredients are pretty much taste.

Starting tomorrow, look for a lot of low carb recipes from Lucky and I. For the past few years, when ever we have induldged in our favorite passtime ~(Cooking and eating), and started to tip the scales. We pass a spread sheet back and forth and record our success in losing weight. In the old days the words “PARTYDOWN” had a whole different meaning than they do to us now! Partydown means- Screw the diet for the next couple Months. Unfortunately. Party is over, and the carbs must be controlled.Some eat to live~Some of us live to Eat!

There, I turned Lucky on to his First Whopper Hamburger. (Dang they Were Great when they first opened) Anyhow, he turned me on to his favorite dingy blond(Lets be fair here, she was in college).
Niether of us really wanted to be tied down, and she liked us both.
Since she had 1/2 of a commitment from both of us. She had to be True blue to us both, no other guys. Meanwhile We both dated When/Where and Who we wanted, After all, we only had 1/2 a girl a piece.
It was a good Summer!
I was working Fisher Body/I couldn’t stand working inside, so I started helping Lucky on his Charles Chips Route.
We actually didn’t get in that much trouble! We both had pretty good princibles.
If I had to go to war, and I could choose someone I could count on .

Than in Pops Lucky. My first sight of Lucky/Than Larry, He was surrounded by a bunch of thugs. He starred them all in the eye, talked about a hundred words a minute, and they backed off! I am pretty sure I came up with the name Lucky at that Moment.
LT became a member right than, of our little circle, and we learned some of the Philadelphia ways. (Man- I was a Detroiter, he opened my eyes). We used to go to the dances, but we never danced fast till Lucky taught us. I still use some of his steps from back than. Dancing was a quick way to them young ladies hearts. he proved that to us.

Lucky with the slicked back hair, coming out of his job at the Mai Kai Theater. (Behind the Mai Kai is a 1 Mile Square Area of Woods & Fields)
I and another friend was waiting for him. As soon as he appeared , all three of us watched these kids about a year or two younger than us carrying a case of beer- heading straight torwards us, than cutting off into the woods. Damn we were thirsty. We circled and converged on the kids and let them know they were too young to drink(Maybe we were 16)We got the beer. As we were enjoying ourselfs, A guard or Cop or someone with a official looking uniform made us follow him back to the road letting us carry the case. I think Mike had the case, I reached around him grabbed a beer and dropped it, Lucky would kick it off the trail. When we got back to the road, we just ran, to soon after go back and collect our beer.
I am starting small, making sure Diane doesn’t read this.
