    2 Cannelloni Noodles
    1 1/4 cloves minced garlic
    1 1/4 shallots chopped
    1 1/2 tsp. olive oil
    1/4 dry sherry
    1/2 c. heavy whipping cream
    s & p to taste
    1/4 chopped onion
    1/4 c. fresh sliced mushrooms
    1/4 chopped zucchini
    1/4 diced eggplant
    1/2 roasted red bell pepper diced
    1/4 tsp. dried basil
    1/4 tsp. dried oregano
    3 tblsp. ricotta cheese
    1/4 c. grated parmesan cheese

    Parboil cannelloni. Meanwhile cook garlic and shallots in 1 tblsp. olive oil over medium heat for 30 seconds. Pour insherry, raise heat to high and reduce liquid by half. Stir in cream and reduce tilll there is about 1/2 c. liquid. Remove from heat, season with salt & pepper. Set cream sauce aside.
    In a large skillet heat one tablespoon olive oil over medium heat.Cook onion, shallots garlic, mushrooms, zucchini, and eggplant till tender. Transferto large bowl. Stir in redpeppers, basil, oregano, ricotta and parmesan cheese. Season to taste. Set aside.
    Preheat oven to 350, lightly grease baking dish. Stuff vegetable mixture/cheese filling into cannelloni.. Place in dish, cover with cream sauce. Bake for 25 mins.
