Trim ends of zucchini, disregard. Quarter lengthwise then cut into one inch pieces.Combine sugar & 2 tblsp. water in a saucepan. Bring to boil, cook till sugar dessolves about 1 minute.Reduceto low, add zucchini, cover and simmer sirring occasionally till tenderabout 7 to 8 mins. Drain, reserve syrup.Tosszucchini in a bowl with mintand 2 tblsp. syrup. Cool to room temp. Serve as appetizer salad.
Doesn’t it though? I’m gonna try it next time I go to the grocery store. I remember as a kid I didn’t even like zucchini, all of a sudden in thepast two yrs. I can’t get enough of it.. Go figure….HA. 😆
