    Pepsi-Sirloin-Black Bean Chili

    5 lbs. Diced Sirloin
    2 tablespoons corn oil
    1/2 cup ground cumin
    2 tablespoons cocoa powder
    1/2 cup pasilla powder
    2 teaspoons cayenne pepper
    2 tablespoons ground corlander
    2 teaspoons black pepper
    4 tablespoons kosher salt
    2 tablespoons tomato paste
    1/2 cup ancho puree
    1 yellow onion
    2 lbs. tomatoes
    1/2 cup peeled garlic
    32 oz. chicken stock
    16 oz. pepsi
    2 cups cooked black beans


    Roast tomato & onion in oven until tomato skins are black. Add garlic to tomato mixture. Pulse tomato, onion, and garlic mixture in food processor. Leave ingredients coarsely chopped. Preheat skillet to HOT. Add corn oil. Add Sirloin. Brown well. Add dry spices. Add tomato mixture. Add chicken stock and Pepsi and bring to a simmer and cook 1 hour or until meat is tender. Add cooked black beans and simmer 15 minutes or until beans are tender.
