For the traditional oyster shooter, place one shucked Pacific oyster in a shot glass. Top with 1 Tbl. cocktail sauce and a sprinkling of freshly grated horseradish. Garnish with a lemon wedge. Makes 6 shooters.
For the wasabi citrus splash shooter, place 3 Olympia oysters in each shot glass. Mix juice from 2 oranges, 1 lemon and 1 lime. Add chopped chives to the mixture. Pour 1 1/2 oz. into each glass. Reconstitute the wasabi with 3/4 tsp. of cold water. Roll into small pearls, then add 1 to each glass. Be careful: the wasabi pearls pack a powerful flavor.
Makes 6 shooters.
For the black tie shooter, wash and shuck 6 Pacific oysters. Leave oyster on the half shell. Dollop 1/2 tsp. creme fraiche on each oyster and top with a 1/4-1/2 tsp. caviar.
