HAM-POTATOES AU GRATIN
1/4 c. chopped onion
1/4 c. chopped green pepper
2 tbsp. butter or margarine
1 tbsp. flour
Dash pepper
1 c. milk
4 oz. (1 c.) sharp process American
cheese, shredded
1/4 c. mayonnaise or salad dressing
3 med. potatoes, cooked and diced (3
c.)
1 lb. cooked ham, diced (2 c.)
Cook onion and green pepper in butter until tender. Stir in flour and pepper. Add milk and bring to boil stirring constantly. Reduce heat; add cheese and mayonnaise; stir until cheese melts. Combine potatoes and ham with sauce. Bake in 10 x 6 x 1 1/2 inch baking dish at 350 degrees for 30-35 minutes. 4-6 servings.
