1 quart Leeks, chopped
1 quart Heavy Cream
1 cup Flour
Salt and Black Pepper – as needed
Paprika – as needed
Melt butter in a large saucepan over medium heat; add leeks and saute, stirring (5 minutes); stir in flour and cook, stirring (3 minutes); add milk and cream and continue stirring until sauce thickens. Add cheeses, thyme and nutmeg; cook stirring until cheeses melt; season with salt and black pepper; cover and keep warm until ready to use.
