    CORNMEAL-CRISP ALASKA SOLE with LEMON-PECAN TARTAR SAUCE

    COOKING TIME: Approximately 3 minutes

    24 (6 oz each) Sole Fillets, thawed if necessary
    8 large Eggs
    1 cup Water
    3 cups Yellow Cornmeal
    1 tsp. Lemon Pepper
    1 cup Butter or Margarine
    *Lemon-Pecan Tartar Sauce

    *Lemon-Pecan Tartar Sauce
    2 cups Mayonnaise
    2 cups Toasted Pecans, chopped

    4 tsp. Cornichons. Drained and chopped
    2 tsp. Lemon Zest, grated
    Salt and Cayenne Pepper – to taste

    Mix together all ingredients except salt and cayenne pepper. Season with salt and cayenne pepper. Refrigerate until ready to serve.
