    Cornbread-Coated Pork Chops

    1/4-cup sour cream
    4-pork loin chops (5 ounces each), cut 3/4-to 1 inch thick, all visible
    fat removed
    1 1/2-cups cornbread stuffing mix
    Freshly ground black pepper

    Preheat oven to 375. Spread sour cream over pork chops, coating all
    sides. Coat with cornbread stuffing mix. Place coated pork chops on a
    rack in a shallow baking pan. Season with pepper. Bake chops, uncovered
    45 minutes or until done. Serve immediately. Serves 4.

    On the second batch, I thinned the sour cream with buttermilk!! Gives new meaning to “Big & Rich”!! 😯 Awesome!!

    Boy, I tried something tonight, it would have came out pretty good, but, I didn’t like the stuffing mix. I stuffed chicken breasts with stove tops stuffing mix, then poured cream of chicken and cream of mushroom on top, and cooked for about an hour, I would have really liked it, but I don’t too much care for the stuffing I got!

    Well, I got chicken breasts on sale, so I have a bunch to figure out what to do with them! Cheap and easy, that’s me!

    Smoke ’em and then use in chicken and dumplin’s!! Or chicken enchiladas!!
    Smoked really makes a difference!!
