    Chris’s Vegetable Beef Soup

    1 lb. ground beef
    1 lg. onion – chopped
    2 to 4 celery sticks – chopped

    Brown in 5 qt. Dutch oven the 3 ingredients well in 3 tbl. olive oil.
    Drain
    and rinse – to get grease out.

    Add back to pan. Add:

    1 15 oz. can petite diced tomatoes, undrained
    1 can diced potatoes, drained
    1 tsp. crushed garlic OR 1 clove garlic, crushed
    1 14 oz. pkg. frozen carrots, peas, corn & green beans
    5 c. beef broth or equivalent
    2 handfuls farfalle or bow tie pasta (optional)

    Simmer all ingredients till heated through and pasta, if added, is done.
    Serve.

    Well, Lucky, I don’t know. I am not sure not to do this with this forum. In others I can just go down to the bottom and click on “move”. So maybe I can post this there also? By my old standby – cut & paste! LOL Yes I am from the old school – no mouse, just keyboard.

    By the way, this is very good! It got recipe of the month on Debbie Macomber’s members’ recipes web site for April! I got all kinds of neat gifts!

    During the winter, I make soup every Sunday, about 8 quarts, for my co-workers monday lunch…(they call me the Soup “Nutzie”) I’ll be sure to try yours early on in the season.
