Chili-Lime-Roasted Peanuts
Yield: 16 servings
2 tablespoons peanut oil
2 tablespoons lime juice
1/2 teaspoon chili powder
1 teaspoon ground cumin
1 tablespoon granulated sugar
2 tablespoons kosher salt, divided
4 cups unsalted roasted shelled peanuts
Preheat oven to 450 degrees. In a large bowl, combine oil, lime juice,
chili powder, cumin, sugar and 1 tablespoon salt. Add peanuts and toss
well to coat. Use a slotted spoon to transfer peanuts to a rimmed baking
sheet, arranging them in a single layer. Roast until fragrant and starting
to browning, stirring once, for about 8 minutes. Sprinkle peanuts with
remaining 1 tablespoon salt. Let cool to room temperature before serving.
