    7 lbs. ground beef
    1 lb. chopped onions
    8 oz. green pepper
    3 lb. 3 oz. canned tomatoes with
    liquid, chopped
    1 lb. 12 oz. tomato paste
    3 lb. 6 oz. kidney beans
    2 1/2 qts. water
    1 lb. 8 oz. Cheddar cheese, shredded,
    1 tbsp. garlic powder
    2 tsp. pepper
    3 tbsp. chili powder
    1 tbsp. paprika
    1 tbsp. onion powder
    2 tbsp. ground cumin

    Brown ground beef, drain. Add onions, garlic powder, green pepper, pepper and seasonings. Cook for 5 minutes. Stir in tomatoes, water and tomato paste, mix well. Bring to boil. Reduce heat. Cover. Simmer slowly, stirring occasionally until thickened about 40 minutes. Stir in beans. Cover and simmer about 10 minutes or until hot. Garnish with cheese.


    Chili Con Carne

    4 lbs. ground beef
    1 tbsp. salt
    4 large onions, chopped (4 cups)
    4 med. green peppers, chopped (2 cups)
    4 cans kidney beans, drained (1 pound each)
    2 cans tomatoes (1 pound 13 oz. each)

    3 bay leaves, finely crushed

    Season ground beef with salt. Brown the meat in a 10-quart Dutch oven or kettle.

    Add onion and green pepper; cook till tender but not brown. Add remaining ingredients. Cover and simmer 2 hours, stirring occasionally. Add water, if needed for desired consistency.

    Makes 25 servings (about 1 cup each)
