Ingredients
200 grams rice noodles
400 grams skinless chicken breast cut into strips.
2 bunches bok choy sliced lengthways
1 red capsicum sliced
200 grams snowpeas blanched
1/3 cup chilli & Lime dressing
1 tsp soya sauce
1/2 cup corriander leaves
1 Tablespoon chopped nuts
1 Pour boiling water over noodles and allow to soften then rinse.
2 Heat oil in wok over medium heat add chicken until golden remove from wok. Add vegetables to wok 1-2 minutes until slightly soft .Return chicken to wok with dressing and soya sauce cook 1-2 minutes.
3 Toss noodles through chicken and divide into servings. Sprinkle with nuts and corriander leaves.
