6 bone in chicken breasts
1 pd. shallots, divided
1 c. champagne or sparkling white wine
salt and pepper to taste
2 tblsp. tarragon, divided
4 tblsp. butter
Preheat oven to 400
Cover bottom of pan with diced shallots
Place chicken on top, season with salt, pepper, 1 tsp. tarragon
Top with 1 tbsp. butter, pour champagne around chicken.
Bake uncovered 50 mins. basting every 15 mins.
