Bacon/Cheese/Tomato Cups (makes 30)
8 slices bacon, fried crisp
1/2 small onion
1 med tomato, seeded
3 ozs. cheddar cheese, grated, not shredded
1/2 cup mayonaisse
1 tsp basil.
1 10 oz can refrigerated flaky biscuits. (must be the flaky ones
so you can separate layers.)
Coarsely chop bacon and tomato, finely chop onion.
Grate cheese, should have 3/4 cup. Mix all ingredients except
biscuits, set aside.
Separate biscuits into 3 layers each, press into bottoms of
muffin tins. divide bacon/cheese mixture equally between cups,
These can be made, baked, and then rewarmed and are still good.
