When we were kids, we hated spicy "hot" food. This is the recipe that changed our minds. Guacamole can be made as hot as you like, without harming the flavor in the least. It's something about the avocados. This is irresistible so make plenty.
Mom's Guacamole
Avocados
mayonnaise
salt and pepper
garlic powder
cayenne
lemon juice
Choose avocados that are just ripe. They should give when you press on them, but they should not be too soft. Cut them in half and remove the seed. Scoop the avocado out of the skin and put in a medium bowl. Repeat with other avocados, if you have them. Mash them a bit with a spoon and add a few spoonfuls of mayonnaise (you need just enough to make the mixture reasonably smooth after it has been mixed with the mixer). Use a hand mixer and beat until smooth. Use the salt, pepper, garlic powder, and cayenne to season to taste. Make it a little less hot than you want it. It gets hotter as it sits. Keep refrigerated. The lemon juice is to prevent oxidation. Add a little lemon juice to the guacamole after you season it. If you see signs of the guacamole turning black, add a bit more. It's still good if it turns black, but it isn't very appetizing.
Use as a dip for corn chips or as you would any guacamole.
