This super easy recipe can be served as a side dish or as an appetizer or snack. I served mine with a nice sirloin steak. You can also serve this as an appetizer with toasted bread, pita chips, crackers, etc. Enjoy!

white bean puree

1 (15 oz) can white beans, drained and rinsed
1 tablespoon fresh parsley leaves
3 cloves garlic
1 tbsp fresh lemon juice
2-3 tbsp extra virgin olive oil
salt & black pepper to taste

Combine all ingredients in a blender or food processor. Blend until the mixture becomes smooth.

Refrigerate until ready to use.
