4-6 potatoes, washed & cut into 3/4-inch pieces
2 tablespoons chopped fresh dill
4 garlic cloves, cut in half
salt, to taste
black pepper, to taste
2 tablespoons olive oil
Preheat the oven to 425 degrees F. Combine all ingredients in a bowl and toss to coat. Roast in the oven for about 20 minutes or until tender and crisp.
