Spinach Salad

2-3 mandarin oranges
2 2/3 cups fresh baby spinach leaves
1/2 red onion, chopped


3 tbsp extra virgin olive oil
2 tbsp freshly squeezed orange juice
2 tsp lemon juice
1 tsp clear honey
1/2 tsp whole-grain mustard
salt and pepper

1. Slice the top and bottom off each orange with a sharp knife, then remove the peel and pith. Working over a small bowl to collect the juices, carefully slice between the membranes of the orange to remove the segments.  Reserve any juices for the salad dressing.

2. Mix the spinach leave and orange segments together, then arrange them in a serving dish. Sprinkle the onion over the salad.

3. To make the dressing, whisk the oil, orange juice, lemon juice, honey, and mustard together in a small bowl. Season to taste with salt and pepper.

4. Pour the dressing over the salad just before serving. Toss the salad well to coat the leaves with the dressing.
