Avocado & Lime Soup
2 ripe avocados
1 small onion, chopped
1 garlic clove, chopped
2 tablespoons fresh chopped cilantro
1 tablespoon chopped fresh mint
2 tablespoons fresh lime juice
3 cups vegetable stock
1 tablespoon rice vinegar
1 tablespoon low sodium soy sauce
salt & black pepper, to taste
Cut the avocados in half and remove the pit. Scoop out the flesh and place into a blender. Add in the onion, garlic, cilantro, mint, lime juice and 1 1/2 cups of the stock. Process until smooth.
Add the rice vinegar, soy sauce and the remaining stock. Season with salt and pepper, to taste. Process again to mix.
Serve immediately or cover and refrigerate until ready to serve.
Anything with these ingredients (avocados, cilantro, lime) gets my attention. I had been eyeing this recipe for a few days, and I finally got the chance to try it. Holy cow, it's amazing! I did add some finely diced jalapenos for some heat, but that's just personal taste. It's not the most appetizing thing to look at (for me anyways) but it does deliver on taste/flavor!
