Grilled Chicken Salad
This recipe is makes great use of leftover grilled chicken.
2 chicken breasts, grilled and chopped
1 package spring mix greens
1 large tomato, chopped
1-2 handfuls herb croutons
1 handful Ocean Spray Craisins Sweetened Dried Cranberries
Dressing:
1/2 olive oil
1/2 balsamic vinegar
Divide the greens among 4 salad plates. Divide the tomatoes and chicken evenly on top of the greens. Top with croutons and Craisins. Drizzle with oil and vinegar.
Serves 4

Chicken is one of my favorites meats. I am not much of a red meat eater, so I primarily eat fish, chicken, and turkey. I am always looking for ways of low fat cooking, so when I come across a recipe like this, I am always interested in trying it and if I like it, i will add it to my list of healthy recipes. I am looking forward to trying this grilled chicken recipe out. It looks good.
