Roasted Baby Red Potatoes with Parsley

Roasted Red Potatoes
2 lbs small red potatoes, cut in quarters
1 garlic clove, minced
1/2 cup fresh parsley, chopped
2 tablespoons olive oil
salt, to taste
fresh cracked black pepper, to taste

Preheat the oven to 400 degrees F. In a large baking dish, combine all ingredients and toss well so that all the potatoes are coated. Place in the oven and cook for 30-45 minutes or until the potatoes are crisp and tender. Toss the potatoes half way through to evenly brown.

Serves 4-6

    These potatoes would make a lovely garnish for a pot roast. Instead of parsley, I bet you can use rosemary.
